Our kitchen knife line is the workhorse of the factory. We build the best kitchen knives set ranges (3, 5, 7, 8-piece blocks, including the kitchen knife set with block format popular in UK retail) — utility knife, paring knives, meat cleaver knife, chinese cleaver, plus standalone hero SKUs (the chef knife your brand puts on the front of the box). We use one balance philosophy for German profiles (heavier, full-bolster, slightly forward bias, ~20° per side sharpening angle) and a different one for Japanese profiles (lighter, neutral balance, thinner spine, 15° per side).

Stamped is laser-cut from sheet steel — lighter, less expensive, lower MOQ. Forged is hammered from a billet, with a full bolster — heavier, premium look, ~30% higher unit cost. Stamped is fine for most retail; forged sells better at premium price points.
German profile is heavier (180-220g for 8"), full-bolster, curved belly for rocking cut, 20° bevel per side, 55-58 HRC. Japanese is lighter (160-180g), thinner spine, flatter belly for push cut, 15° per side, 58-62 HRC. They sell to different buyers.
Yes, but they're a specialty. MOQ is 300 units, lead time +15 days. We use VG-10 or higher-tier steel and hand-finish the urasuki (back hollow grind).
Triple-rivet pakkawood/POM handles are pressed and pinned, then hand-sanded flush. We check for protruding rivets in 100% QC because that's the #1 return reason for kitchen knives on Amazon.
